Grateable Cashew Cheese


  1. 1/2 cup soaked cashews
  2. 2 tsp lemon juice
  3. 2 tbsp agar powder
  4. 4 tbsp corn starch
  5. 2 tsp sea salt
  6. 4 tbsp solid coconut oil
  7. 3 cups water



  1. Add all the ingredients into a blender and blend until very smooth with no pieces of cashew remaining.
  2. Pour the mixture into a pot on medium heat and let it thicken, stirring constantly.
  3. Once thick, take off the flame and immediately pour into a lightly oiled glass bowl.
  4. Let it cool down completely, place it in the fridge and let it set for a couple of hours.
  5. Slice/ grate and enjoy!
