Raw Baba Ganoush

INGREDIENTS:

  1. 1 Eggplant
  2. 1 tbsp Tahini
  3. 2-3 tsp Lemon juice
  4. 1/4 tsp sea salt (optional)
  5. 1 tsp cumin powder
  6. 2 cloves garlic
  7. Parsley/mint for garnish
  8. 1 tsp olive oil (optional)
  9. Chilli flakes for garnish

DIRECTIONS:

  1. Blend all the ingredients in the food processor until slightly smooth.
  2. Transfer into serving dish of choice, add the greens, oil and chilli flakes for garnish
  3. Serve chilled!
