Garlic Basil Cashew Cheese


  1. 1/2 cup soaked cashews
  2. 2 tsp lemon juice
  3. 2 tbsp agar powder
  4. 4 tbsp corn starch
  5. 2 tsp sea salt
  6. 1 tbsp garlic powder
  7. 3 tsp dry basil
  8. 4 tbsp solid coconut oil
  9. 3 cups water



  1. Add all the ingredients except the basil into a blender and blend until very smooth with no pieces of cashew remaining.
  2. Add in the dry basil and pulse a couple of times, until the basil is incorporated into the mixture. We want it to be visible in the cheese, and not completely blended.
  3. Pour the mixture into a pot on medium heat and let it thicken, stirring constantly.
  4. Once thick, take off the flame and immediately pour into a lightly oiled glass bowl.
  5. Let it cool down completely, place it in the fridge and let it set for a couple of hours.
  6. Slice/ grate and enjoy!
