Garlic Basil Cashew Cheese

INGREDIENTS:
- 1/2 cup soaked cashews
- 2 tsp lemon juice
- 2 tbsp agar powder
- 4 tbsp corn starch
- 2 tsp sea salt
- 1 tbsp garlic powder
- 3 tsp dry basil
- 4 tbsp solid coconut oil
- 3 cups water

DIRECTIONS:
- Add all the ingredients except the basil into a blender and blend until very smooth with no pieces of cashew remaining.
- Add in the dry basil and pulse a couple of times, until the basil is incorporated into the mixture. We want it to be visible in the cheese, and not completely blended.
- Pour the mixture into a pot on medium heat and let it thicken, stirring constantly.
- Once thick, take off the flame and immediately pour into a lightly oiled glass bowl.
- Let it cool down completely, place it in the fridge and let it set for a couple of hours.
- Slice/ grate and enjoy!
