Raw Tabbouleh

Tabbouleh Salad is a traditionally a healthy vegan Mediterranean appetizer made with bulgur, parsley, mint and chopped vegetables.

Almost raw, isn’t it? How do we make it fully raw? Yes, you guessed it right! With the humble Cauliflower! 😍

Ingredients:

  • 1/4th cup cauliflower, minced
  • 2 cups finely parsley, finely chopped
  • 2 medium tomatoes, chopped
  • 1 cucumber, chopped
  • 2 green onions, finely chopped
  • 1/4th cup mint leaves, finely chopped
  • 1/4th teaspoon black pepper
  • 1/4th teaspoon salt
  • 2 tablespoon lemon juice
  • 2 tablespoons olive oil
  • Pomegranate seeds, garnish
