Cauliflower Rice with Mushroom Gravy

Who needs rice when we’ve got the humble Cauliflower?
Just blitz in the food processor for a few seconds, and.. RICE!!

Ingredients for the Rice:

  • 1/2 head of a medium sized Cauliflower
  • 1 small Apple, peeled
  • 1 clove Garlic
  • Salt to taste

This Mushroom masala is a creamy, comforting and hearty gravy and is just perfect for anyone who loves mushrooms.

Ingredients for the Mushroom Gravy:

  • 5-6 large Mushrooms, thinly sliced
  • 1 large ripe Tomato
  • 1/2 cup Cashews, soaked
  • 1 clove Garlic
  • 1 inch piece Ginger
  • 1/4th tsp each Cinnamon, cardamom, cumin, coriander, fennel , black pepper & red chilli powders
  • 1 Medjool Date
  • Salt to taste
  • 1/4th cup water
  • Chopped coriander for garnish

For the gravy, blend together tomato, cashews, date, salt, spices and water until it forms a creamy and delicious gravy.

Thinly slice your mushrooms and marinate it in your gravy for 10-15 minutes.

Plate the Cauliflower rice and mushroom gravy together, garnish with coriander and enjoy!
