Raw Tomato Soup

Soups tend to be enjoyed mostly during the cold weather.

A raw soup however can be enjoyed all year round. And they are really simple to make. Just add the ingredients to a blender, blend until smooth, serve and enjoy!

Ingredients:

  • 2 large Tomatoes, cubed
  • 1/2 red Onion
  • 1 clove Garlic
  • 4-5 Sundried tomatoes, soaked
  • 2 tbsp Lemon Juice
  • 1/4th cup Cashews, soaked
  • 1 tsp Cumin powder
  • 1/2 tsp Chilli powder
  • 3-5 Fresh mint leaves, chiffonade
  • 1-2 Dates
  • Salt to taste
  • Water as desired

Garnish with chopped coriander avocado cubes, sprouts, sliced olives, pomegranate seeds, herbs or spices of your choice. Enjoy!
