Carrot Cake Date Balls

These naturally sweet, spiced, and nutty carrot cake balls are the perfect raw vegan treat! No baking, just wholesome ingredients blended together for a delicious bite. 😋


🛒 Ingredients (Makes 12 balls)

1 cup grated carrots 🥕

1 cup fresh Sukkari dates, pitted (about 10-12 dates)

½ cup desiccated coconut 🥥 (plus extra for rolling)

¼ cup almonds

¼ cup walnuts

¼ cup pecans

¼ cup cashews

½ tsp ginger powder

½ tsp cinnamon powder

¼ tsp cardamom powder

Pinch of salt


🥣 Instructions

1️⃣ Add almonds, walnuts, pecans, cashews, and desiccated coconut to a food processor. Process until finely ground.
2️⃣ Add ginger powder, cinnamon powder, cardamom powder, and a pinch of salt. Pulse to mix.
3️⃣ Add grated carrots and pitted Sukkari dates. Blend until a sticky dough forms. If needed, scrape down the sides and process again.
4️⃣ Scoop out portions and roll into bite-sized balls.
5️⃣ Roll each ball in desiccated coconut for a beautiful finish.
6️⃣ Enjoy immediately or refrigerate for a firmer texture.
