🌱 Raw Marinated Veggie Curry with Cauliflower-Apple Rice 🍛✨

🥗 Ingredients

Marinated Veggies
🍄 1 cup white mushrooms, chopped
🌶️ 1 red bell pepper, chopped
🧅 ½ red onion, chopped
🌱 ½ cup green peas
🌿 2 tbsp fresh coriander

Gravy
🍅 1 large ripe tomato
🥜 ¼ cup soaked cashews
🧄 1 garlic clove
🌴 1 date
🍋 1 tsp lemon juice
🌿 ½ tsp cumin seeds
🌿 ½ tsp fennel seeds
✨ ¼ tsp cardamom powder
✨ ¼ tsp cinnamon powder
🌶️ ½ tsp red chili powder
🧂 ½ tsp salt

Cauliflower Rice
🥬 2 cups cauliflower florets
🍏 1 apple, peeled & cubed
🧂 ½ tsp Himalayan pink salt
🌿 Fresh coriander for garnish



👩‍🍳 Instructions

1️⃣ Blend gravy ingredients until smooth & creamy.
2️⃣ Toss chopped veggies in gravy & marinate (15 mins or overnight 🌙).
3️⃣ Pulse cauliflower + apple + salt into “rice.”
4️⃣ Plate rice, add marinated veggies, garnish with coriander 🌿.
