Raw Red Pepper & Tomato Soup Recipe

Raw soups are my absolute favourite 😋

They are refreshing, delicious, creamy, tangy and spicy!
A burst of flavors would be the best way to describe it!! 🤩

And the best part is always the toppings!
My favourites are sprouts, olives, pomegranate, pumpkin seeds, lemon juice and some fresh herbs 💚

Raw Red Pepper & Tomato Soup Recipe

✨ Ingredients:
– Red bell pepper: 1 medium (about 120g)
– Tomato: 1 medium (about 150g)
– Garlic: 1 clove
– Onion: ¼ small (about 30g)
– Green chili: ½ small (adjust to taste)
– Soaked cashews: ½ cup (about 60g)
– Hemp seeds: 1 tablespoon (about 10g)
– Salt: ¼ teaspoon (adjust to taste)
– Lemon juice: 1 teaspoon

✨ Instructions:
1. Prepare the Ingredients:
– Chop the red bell pepper, tomato, garlic, onion, and green chili into smaller pieces to make blending easier.
– Drain the soaked cashews.

2. Blend the Soup:
– Add all the ingredients to a high-speed blender: red bell pepper, tomato, garlic, onion, green chili, soaked cashews, hemp seeds, salt, and lemon juice.
– Blend until smooth and creamy. If the soup is too thick, add a small amount of water to reach your desired consistency.

3. Serve:
– Pour the soup into a bowl and enjoy immediately.
