Spicy Dehydrated Veggies


Crispy, zesty veggies that are bursting with flavor, no cooking needed! Just pure deliciousness in every bite 😋 

Carrots, sugar snap peas, baby corn & bell peppers tossed in a fresh herb & lemon marinade. Healthy snacking just leveled up! ❤️ 

Who’s dehydrating with me?



Servings: 2–3 as a snack or side 
Prep time: 15 minutes 
Dehydrator time: 6–10 hours (for that perfect crunch!)

Ingredients:
– 🥕 2 medium carrots (about 200g), sliced into thin rounds or half-moons 
– 🟢 150g sugar snap peas (trimmed) 
– 🌽 100g baby corn, halved lengthwise 
– 🟡 1 medium yellow bell pepper (or mix of colors), cut into bite-sized pieces 
– 🫒 2–3 tbsp olive oil (cold-pressed for raw) 
– 🧂 1 tsp salt (or to taste) 
– ⚫ ½ tsp black pepper (freshly ground) 
– 🌿 1 tsp dried mint 
– 🌿 1 tsp dried oregano 
– 🌿 1 tsp dried basil 
– 🌶️ ½–1 tsp chilli powder (adjust to your spice level) 
– 🍋 Juice of 1 lemon (about 2–3 tbsp)

Instructions:
1. Wash and prep all veggies: slice carrots, trim sugar snap peas, halve baby corn, and chop bell pepper into chunks. 🥕🌽

2. In a large bowl, whisk together olive oil, lemon juice, salt, pepper, dried mint, oregano, basil, and chilli powder until combined. 🥣

3. Add the veggies and toss well so everything is nicely coated. Let marinate for 10–15 minutes. 😋

4. Spread in a single layer on dehydrator trays. 🌡️

5. Dehydrate at 115°F / 45°C for 6–8 hours (chewy) or up to 10 hours for extra crisp. Check and rotate trays halfway. 🔄

6. Cool slightly and enjoy your crispy raw vegan treat! 🎉

Tips:
– Add a pinch of garlic powder or nutritional yeast for extra flavor (still raw!) 🌟
– Longer dehydrating = crunchier “chips”, perfect healthy snack! 🔥
– Fully raw, vegan, gluten-free & oil-optional.
