Falafels

Raw Vegan Falafels with a delicious tahini sauce? Why not.

Falafels are vegan by default. They can easily be made raw since raw chickpeas are used to make them anyway.

For the Falafels, you will need:

  • 1 cup chickpeas, soaked overnight
  • 1/2 cup parsley, chopped
  • 1/4th cup mint, chopped
  • 1 medium white onion
  • 4 cloves garlic
  • Salt to taste
  • 2 tbsp Lemon juice
  • 1 tbsp cumin powder
  • 1 tsp black pepper powder
  • 1 tsp red Chili powder
  • 1 tbsp Ground flax seeds (for binding)

Add all the ingredients to a food processor and process until a coarse dough is formed. Rest for 10 minutes.

Form into equal sized balls and dehydrate overnight or 6-8 hours at 45°C.

For the falafel sauce:

  • 2 tbsp untoasted tahini
  • 1 tbsp lemon juice
  • 1-2 tbsp cold water (to adjust consistency)
  • 1/4th tsp garlic powder
  • Salt to taste

Serve fresh with the sauce.
