Raw Vegan Samosas!! Why not?
Think about it for a moment. A regular samosa consists of two components, yes? The crust/dough and the filling.
When it comes to the crust, it is flakey, crunchy and soft all at the same time, due to the fat mixed with the flour to form a crumbly dough.
I’ve done the same using ground flax seeds and cashew butter.


Next, I added warm water and formed the dough.

Let the dough rest for like 10 minutes or so. Perfect time to prepare the samosa filling!

For the filling, first, process the dry spices.


Next, process your nuts until crumbly.



Next go in with your vegetables, fresh and ground spices. Mix it all well and let it rest
Now comes the fun part!

Remember your flax dough? Divide them into equal sized balls.

Flatten it out with on a silicone sheet by pressing the dough ball between two silicone sheets with the help of some circular object like the back of a pan. Apply even pressure to get uniform thickness.

From here, it is the usual samosa making process. Divide the flattened dough into two by cutting it lengthwise.

Form a cone and stuff the filling in, then seal shut.


Dehydrate at 45°C for 3-4 hours. Or overnight. The longer you let it go, the crispier it gets.
Keep in mind that the filling is made with fresh ingredients and may go bitter after a while.. like 12 hours or so.



Serve with Green Chutney! Enjoy!

Now on to the recipe, which will be divided into three components. The dough, the dry spices and the filling.
For the Dough:
- 1 cup ground flax seeds
- 1 tbsp cashew butter
- 1 tsp carom seeds
- 1/4th cup warm water
For the ground spice mix:
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 1/2 tsp fennel seeds
- 1/2 tsp black peppercorns
- 2 clove buds
- 1 cardamom pod
- 1/2 tsp cinnamon powder
- 1/2 tsp red chilli powder
- 1 tsp turmeric powder
Grind all the ingredients into a fine powder. Taste and adjust spice according to taste and preference.
For the Filling:
- 1/2 cup Pecans
- 1/4 cup Cashews
- 1 Brazil Nut
- 1 small Onion
- 2 cloves Garlic
- 1 inch piece Ginger
- 3 medium sized florets of Cauliflower
- 5-6 Mushrooms
- 1/2 medium Apple
- 1/4 cup Fresh Coriander
- Salt to taste
- Ground spice mix
