Sushi

These raw vegan sushi rolls are fresh, light, easy and fun to make.
Ingredients:
- 8 Nori sheets, untoasted
- 1 Avocado, sliced
- 1 Tomato, thinly sliced
- 1 cucumber, sliced
- 1/2 head of Cauliflower
- 1 Apple
- 1 clove garlic
- 1/4th cup Chopped coriander
- Salt to taste
Blitz the cauliflower, apple, coriander garlic and salt in a food processor. Pulse 10-15 times until a rice like consistency.
To assemble the sushi, on a nori sheet, spread the cauliflower rice evenly. Next, add the slices of cucumber, tomato and avocado.
Make sure not to overfill, as it will make the whole thing more difficult to roll.
Pick up the edge of the nori sheet that is closest to you and roll forwards. Once everything is contained, pull it all tight, making sure everything holds together. Cut into slices of your desired thickness. Serve immediately with the sauce.
For the sauce, you will need:
- 1/4th cup Cashews, soaked
- 2 tbsp Lemon juice
- 1 Medjool Date
- 1 inch Ginger
- 1 clove Garlic
- Salt to taste
- 2-3 tbsp Water (to adjust consistency)
