Lasagna

This simple Raw Vegan Lasagna is perhaps one of the most fun raw recipe to make. It does take some preparation time and is a recipe you probably would only make for special occasions.

This dish has two main components. The meat layer and the cheese sauce layer.

For the Meat layer, you will need:

  • 1/2 cup Walnuts
  • 10-15 Mushrooms
  • 1 Apple
  • 1 Carrot
  • 2 cloves Garlic
  • 1 tsp each dry Oregano, Basil, Rosemary, Cinnamon, Cumin and Red Chilli Powders
  • Salt to taste

Pulse all the ingredients for the meat layer in a food processor 10-15 times or until a chunky mince like texture is achieved.

For the Cashew Cheese Sauce Layer:

  • 1 cup Cashews, soaked
  • 1/4th cup water (or a little more as needed)
  • Salt to taste
  • 1/2 tbsp Lemon juice
  • 1 tsp Onion Powder
  • 1/2 tsp Garlic Powder

Add all the ingredients for the cheese sauce and blend until a smooth, thick and creamy sauce is obtained.

For the assembly:

  • 4-5 Zucchinis, sliced lengthwise
  • Coriander, chopped (garnish)

Place a few slices of the zucchini on a plate or your dish of choice, slightly overlapping.

On top of the zucchini, add a layer of your prepared walnut meat and spread evenly.

Next, add the cheese sauce and spread this evenly too.

Add zucchini slices and repeat the steps for the filling ingredients until all components are used up or the dish is full.

Garnish with some black pepper, chopped coriander and dry oregano or basil.

Allow the Lasagna to set for about 30 minutes before cutting into squares and serving. Enjoy!
