Zoodles in a Creamy White Sauce!

For the zucchini noodles, aka zoodles, wash, peel and spiralize 3 -5 large zucchinis.

For the white sauce, simply blend the ingredients in the blender until creamy.

Once the sauce is ready, simply pour it all over the zoodles, top with cherry tomatoes, olives, fresh coriander and enjoy!

Ingredients for the sauce:

  • 1/4th cup soaked cashews
  • 1 Zucchini, chopped
  • 1 clove garlic
  • 1 tbsp lemon juice
  • Salt to taste
  • 1/2 tsp Black pepper
  • 1 tsp dry Oregano
  • 1 tsp dry Basil
  • 1 tsp dry Thyme
