Mushroom & Baby Corn Munchurian with Pulao Rice

I am always on a mission to take raw foods to a whole new and interesting level. Today’s fun recipe may take slightly long due to the prep time, but is absolutely worth it! 🤩

For the Munchurian, you will need:

  • 5 large Mushrooms, sliced
  • 3-4 baby corns, sliced lengthwise
  • Munchurian sauce
  • Fresh chopped coriander

Ingredients for the Munchurian Sauce:

  • 1 large ripe Tomato
  • 1/4th cup soaked sun-dried tomatoes
  • 1 green chili
  • 1 thumb ginger
  • 1 clove garlic
  • 1 tsp red chilli powder
  • 1 Medjool Date, soaked
  • 1 tbsp Lemon juice
  • Salt to taste

Blend all the ingredients together and pour the sauce on your sliced mushrooms and baby corn. Garnish with chopped coriander. Marinate for 15 minutes and let’s prepare the rice until then.

For the rice, you will need:

  • 1/2 head cauliflower
  • 1/4th cup Moong bean sprouts
  • 1 clove garlic
  • 1/2 carrot, chopped
  • Fresh coriander
  • Salt to taste

Add the cauliflower, sprouts, garlic and salt to a food processor and pulse until a rice like consistency is achieved.

Next, add in the chopped carrots and coriander and mix well.

Combine the two together & enjoy! 💚
