Pistachio Pudding

This delicious and gorgeous green dessert is the perfect way to end your day!
Rich and light at the same time, this dessert only takes a few minutes to make.
Ingredients:
- 1/4th cup Pistachios, soaked & strained
- 1 ripe Avocado
- 3 Medjool Dates
- 1 tsp rose water
- 1 tsp Lemon juice
- 3-5 tbsp water
- Pinch of Salt
- More Pistachios + Saffron strands (topping)
Blend all the ingredients (except the toppings) in a blender until completely smooth and creamy. Stop and scrape down as needed.
Transfer into serving bowl/dish of choice, cover and freeze for atleast 30 minutes or up to an hour.
Garnish with the toppings when ready to serve. Enjoy!
